“Pizza well done.” This playful double meaning phrase is prominently displayed on the walls and on the menu.  The reasoning for it has to do with the consistency of cooking the dough throughout in a super-heated oven fired by – you guessed it – coal.  Coal allows an oven to reach temperatures in the 1000 degree range, which means that the pizzas cook more quickly and don’t have a chance to dry out.  This process provides the eater with a chewier crust, but the byproduct is that the pizzas seem to be cooked “well done.”  Many people find that the char on the crust adds to the depth of flavor in the pizza, and when mixed with classic fresh ingredients, the taste is unmistakable.  Anthony’s uses fresh dough, made daily, along with an assortment of other fresh ingredients that certainly come through in the taste.  However, while there are some bright spots to Anthony’s – there appear to be some holes as well. Despite a few early inconveniences, which will be addressed later, Babbo eventually delivered. The bottom line, as always is PIZZA, and they definitely have excellent pizza. We started the night with a traditional Margarita that was perfectly balanced with a light tomato puree, fresh and flavorful basil and surprisingly lively mozzarella. We use the word lively because it seemed to dance in your mouth the more you chewed; it was a new experience and a welcomed one at that. We usually save the best for last but who has time for that. Limestone Pizza

Where to find pizza in Lawrence Kansas? I was hoping to have a nice sit down lunch before driving back to KC to catch my flight. A little online research turned up LimeStone. I sat down at the bar and ordered a mushroom and sausage pie. Limestone features traditional artisanal Neapolitan style pizza. Each pie is cooked in a 900 degree wood fired oven which is the focal point of the open kitchen. The pie was amazing and the offered a great homemade chili garlic sauce for dipping. If you are in Lawrence, you need to check this place out. 🙂
